Why This is the Best Dairy-Free, Gluten-Free Cookie Recipe
So what is actually in these then?! I promise - it's actually nothing strange, just normal items you probably already have in your pantry.
There are so many reasons these have been my "go-to" chocolate chip cookie for about a decade. A few quick reasons to love them:
- Unlike a lot of gluten-free, dairy-free, and allergy-friendly recipes, this one only requires ingredients you probably already have at home (no obscure vegan or GF substitutes)
- Takes only 5 min to make and 6 min to bake...that means you have FRESH, WARM cookies within 11 minutes
- They're a great way to sneak some fiber into your kids' (or your own!) diet
- You can freeze them - cooked or raw - to enjoy later on.
A Super-Quick Nutritional Rundown
Do not get me wrong - not all cookies need to be "healthified." I love classic, buttery desserts. But sometimes it's fun to consider the functional aspects of food, and what it can help do for our bodies.
Here's what these dairy-free cookies have to offer:
- Thanks to the oats, they offer 2 mg of iron (in a 2 cookie serving size). That's 11% of your daily needs for a woman who is not pregnant or breastfeeding. For cookies, that's solid!
- These also have 6 g of protein (in 2 cookies). Not exactly a meal, but again, for cookies? Not bad!
- Both flaxseeds and oats contain fiber that is great for helping you feel full and keeping you regular.
A Note About Gluten-Free
Oats are naturally gluten-free, but they can get contaminated with gluten from cross-contact during processing. To ensure that you're truly getting gluten-free oats, check that your oats are certified gluten-free.
If you have celiac disease, this is particularly important, since even small amounts of gluten can damage your intestinal lining. If you're avoiding wheat or gluten as a preference, this small amount of cross-contact is likely not an issue.

Dairy-Free Cookies
Also gluten-free, flourless, nut-free, vegan, and SUPER quick!
- 1 ½ cups Rolled oats (For truly gluten-free: use certified gluten-free oats)
- ½ tsp Baking soda
- ¼ tsp Salt
- ¼ cup Brown Sugar (loosely packed)
- 3 tbsp Peanut Butter (For nut-free: use melted vegan butter, coconut oil, or sunflower seed butter instead)
- ¼ cup Non-dairy Milk
- ¼ cup Vegan Chocolate Chips

Preheat oven to 375 F.

Lightly pulse the rolled oats in a food processor, blender, or nutri-bullet to make oat flour (or, purchase ready-made oat flour). It's OK to leave some full oat pieces if you want a coarser oatmeal-cookie texture.

Combine flour with all of the remaining ingredients. Add the chocolate chips in last, once all of the wet and dry ingredients are combined. The dough will be crumbly, but just sticky enough to form a sphere.

Form into balls and place on a cookie sheet. Bake for 6 minutes at 375 F. Cookies will not "rise" or get bigger like normal cookies - just check for a tiny bit of golden color.
